- 4 skinless boneless chicken fillets, about 1 1/2 lb.
- 1 tsp Italian seasoning mix
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Sea salt and pepper, to taste
- 12 asparagus stalks, ends trimmed
- 1 oz sun-dried tomatoes, chopped
- 4 slices mozzarella cheese
- 1 Tbsp olive oil

- Preheat the Oven: Start by preheating your oven to 400°F (204°C) to ensure it’s ready for baking the chicken.
- Season the Chicken: Lay the chicken fillets on a clean chopping board. Sprinkle each fillet evenly with Italian seasoning, garlic powder, smoked paprika, salt, and pepper.
- Prepare the Chicken Pockets: Carefully slice each chicken fillet lengthwise to create a pocket, making sure not to cut all the way through.
- Stuff the Chicken: Take a slice of mozzarella cheese and add three asparagus spears and a few pieces of sun-dried tomatoes on top. Roll it up tightly and place this roll inside the chicken pocket. Secure the opening with a toothpick to hold everything together.
- Sear the Chicken: Heat olive oil in a large cast-iron skillet over medium-high heat. Place the stuffed chicken fillets in the skillet and sear each side for about 3-5 minutes until golden brown.
