Auntie May’s Breakfast Bundt Cake is not your average breakfast! This savory masterpiece combines the classic flavors of eggs, bacon, and cheese, all baked into a stunning Bundt cake shape. It’s a delightful twist on traditional breakfast fare that’s sure to impress at any brunch or family gathering.
Ingredients
12 large eggs
2.5 cups milk
1/2 cup heavy cream
1 cup diced ham
8 cups bread cubes, diced
1/4 teaspoon minced garlic
2 cups frozen shredded hash browns
1/4 cup chopped green onions
2 cups shredded cheddar cheese or a blend of your favorite cheeses
Instructions
Preheat your oven to 400°F and grease a Bundt cake pan thoroughly.
In a pan, heat olive oil. Add minced garlic and fry hash browns until brown. Set aside to cool.
Build your breakfast Bundt in this order: Layer half of the diced bread. Add diced ham, green onions, cooled hash browns, and 1 cup of shredded cheese. Top with the remaining bread cubes.
In a medium-sized bowl, whisk together eggs, milk, cream, salt, and pepper until combined.
Pour the mixture into the greased Bundt cake pan, evenly distributing the ingredients. Cover the pan with foil and let sit for a few minutes. Top with remaining shredded cheese. (We like to top with more ham on top.)
Bake in the preheated oven for 40 minutes or until the top is golden brown and the cake is set in the center.
Allow the cake to cool for a few minutes before carefully inverting it onto a serving platter.
