1.32 pounds (600 g) Boneless Chicken Thighs
For the Chicken Gyro Marinade:
2 tbsp Finely Chopped Garlic
2 tbsp Lemon Juice
1 tsp Black Peppercorns
3/4 cup Extra Virgin Olive Oil
2 tbsp Paprika
2.5 tbsp Dried Rosemary
2.5 tbsp Whole Coriander Seeds
2.5 tbsp Red Chili Flakes
Coarse Sea Salt to taste
For the Vertical Home-made Rotisserie:
1/2 Large Onion
1 Bamboo Skewer


Instructions

Start by pounding each chicken thigh to ½” (1 cm) thickness using a meat mallet inside a ziplock bag. Repeat for all thighs.
For the marinade, grind paprika, coriander seeds, peppercorns, rosemary, chili flakes, and salt in a mortar to a semi-coarse powder. Blend in garlic, then stir in olive oil and lemon juice.
Coat chicken thoroughly with the marinade, wrap, and refrigerate overnight or at least 2 hours.
Create a vertical rotisserie by skewering a halved onion with a bamboo stick. Skewer the marinated chicken thighs onto this setup.
Preheat oven to 375°F. Bake chicken on a tray using the rotisserie setup for 1 hour or until internal temperature reaches 165°F. Let cool for 15 minutes before serving with tzatziki sauce.
