These Avocado Black Bean Quesadillas offer a delightful blend of creamy avocado and hearty black beans wrapped in a crispy, golden-brown tortilla. This dish is not only a visual treat with its colorful ingredients but also a burst of flavors that balance perfectly between the creamy texture of avocado and the savory touch of mozzarella.


Ingredients

½ red onion, finely chopped
2 ripe avocados, mashed
4 large-sized tortillas
½ cup cooked black beans
1 ½ cups mozzarella cheese, shredded
2 tomatoes, diced
¼ tsp salt
2 tbsp butter
¼ cup sour cream
1 tbsp lime juice
¼ tsp salt
2 tbsp chopped fresh parsley or cilantro


Instructions

In a small bowl, mix the mashed avocados with ¼ tsp salt.
Use a knife to cut each tortilla from the center to one edge.
On one quarter of each tortilla, sprinkle some mozzarella cheese; on the opposite quarter, place diced tomatoes.
On the remaining quarters, spread mashed avocados on one and sprinkle black beans on the other.
Fold each tortilla starting from the avocado quarter and continue clockwise, ending with the cheese on top.
In a skillet, melt the butter over medium heat. Cook each quesadilla until golden brown on both sides.
For the sauce, mix sour cream with lime juice, the remaining salt, and chopped parsley or cilantro.
Serve quesadillas warm with a dollop of sour cream mixture.
