These Avocado Taco Boats offer a delightful combination of creamy avocado, savory taco meat, and a burst of fresh flavors from the black bean and corn salsa. The melted cheese adds a rich, comforting layer that pairs perfectly with the freshness of the avocado.

3 avocados
1 lb taco meat of your choice (ground beef, chicken, or carnitas)
2 cups black bean and corn salsa
1 cup shredded cheese
1 cup sour cream


Instructions

Preheat your oven to 350°F (175°C).
Prepare your taco meat according to your preference. Ground beef with homemade taco seasoning works wonderfully for this recipe.
Slice the avocados in half and remove the pits. Scoop out a bit of the avocado to make room for the fillings if needed.
Place a scoopful (about 1/4 cup) of the prepared taco meat into each avocado half, depending on the size of your avocado “boats.”
Top the meat in each avocado with a generous spoonful of black bean and corn salsa.
Sprinkle shredded cheese over the top of each avocado.
Place the stuffed avocados in the preheated oven and bake for 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye on them to avoid overcooking.
Remove the avocados from the oven and add a dollop of sour cream on top of each one.
Serve immediately and enjoy!
