Description

These Avocado Tuna Melt Bagels are the perfect blend of creamy avocado, juicy tomatoes, and savory tuna, all topped with melted cheddar cheese on a toasted bagel. This dish is not only satisfying but also packed with fresh flavors that are sure to delight your taste buds.

2 Bagels, halved & toasted
2 x 6.5oz/185g cans of Tuna, drained
2 medium-sized Tomatoes, sliced into circles (8 slices total)
1 Avocado, sliced into strips (16 strips total)
4 tbsp Mayonnaise (or to preference)
1 tsp Dijon Mustard
1 Spring/Green Onion, finely diced
1 tbsp Fresh Parsley, finely diced
1/4 tsp Garlic Powder
1/8 tsp Cayenne Pepper (optional)
4 pinches Cheddar Cheese, grated
1 Lemon, juice only (to taste)
Salt & Black Pepper, to taste
Drizzle of Extra Virgin Olive Oil


Instructions

In a bowl, combine the tuna, mayonnaise, Dijon mustard, finely diced spring onion, fresh parsley, garlic powder, cayenne pepper (if using), and a squeeze of lemon juice. Season with salt and black pepper to taste. Mix well and set aside.
To assemble the bagels, start by placing 4 slices of avocado on each bagel half, followed by 4 slices of tomato arranged in a circular pattern.
Season the avocado and tomato with a sprinkle of salt and black pepper, then drizzle with a bit of extra virgin olive oil.
Spoon the tuna mixture on top of the avocado and tomato layers.
Finish by sprinkling a pinch of grated cheddar cheese over the tuna.
Place the assembled bagels under the grill and broil until the cheese is golden and bubbly.
Serve immediately with an extra squeeze of lemon juice and a sprinkle of fresh parsley.
