Description

Baked Boudin Balls are a delightful twist on traditional Southern fare, combining the rich flavors of Cajun sausage with a crispy breadcrumb coating. These appetizers are perfect for gatherings, offering a bite-sized treat that’s bursting with flavor and paired with a tangy Louisiana Dipping.

2 lbs. fresh boudin
6 eggs, divided
1 cup all-purpose flour (120g)
2 ½ cups panko breadcrumbs (200g)
¼ cup milk
Louisiana Dipping Sauce:
¼ cup mayonnaise
2 tablespoons ketchup
1 tablespoon freshly squeezed lemon juice
23 shakes hot sauce
Cajun or Creole seasoning to taste


Instructions

Line a large rimmed sheet pan with parchment paper.
De-casing the boudin, place it in a large bowl.
In a small bowl, whisk two eggs and pour over the boudin, mixing until well combined.
Using a cookie scoop, form the boudin mixture into balls and arrange on the sheet pan. Freeze for at least 30 minutes.
Set up a breading station with three bowls: flour in the first, beaten eggs and milk in the second, and panko breadcrumbs in the third.
Preheat the oven to 425°F and line another sheet pan with parchment.
Coat each boudin ball in flour, dip in egg mixture, then roll in breadcrumbs. Place on the baking sheet.
Spray the boudin balls with oil and bake for 30-35 minutes until golden.
For the sauce, mix all ingredients and season to taste.
