1 ½ pounds salmon fillets, King, Sockeye or Coho, skin optional
¼ cup Dijon mustard
3 tablespoons mayonnaise
¼ cup fresh dill or parsley, finely chopped
3 garlic cloves, minced
Zest of 1 lemon
1 tablespoon lemon juice
1 tablespoon extra-virgin olive oil
Salt and pepper to taste
2 tablespoons capers


Instructions

Preheat your oven to 450°F and line a baking sheet with a silicone mat or parchment paper.
Place salmon, skin side down, on the prepared sheet.
In a bowl, mix mustard, mayonnaise, herbs, garlic, lemon zest, lemon juice, oil, salt, pepper, and capers.
