2 lemons, sliced into thin rounds
1 pound Mahi Mahi fillets
2 tablespoons butter, melted
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon sea salt
¼ teaspoon dried thyme
¼ teaspoon red pepper flakes
¼ teaspoon onion powder
¼ teaspoon ground black pepper
2 tablespoons finely chopped parsley


Instructions

Preheat your oven to 400°F (200°C).
Line a rimmed baking sheet with aluminum foil. Arrange the lemon slices in a single layer on the baking sheet to create a bed for the Mahi Mahi.
Place the Mahi Mahi fillets on top of the lemon slices and brush both sides of the fish with the melted butter.
In a small bowl, combine the paprika, garlic powder, oregano, sea salt, thyme, red pepper flakes, onion powder, and black pepper. Stir to mix the spices evenly.
Sprinkle the seasoning mixture over the fish, ensuring both sides are well coated.
Bake the Mahi Mahi in the preheated oven for 10 minutes. Then, switch to broil on high and cook for an additional 1 ½ minutes, or until the fish is lightly browned and cooked through.
Remove the baking sheet from the oven and sprinkle the fish with chopped parsley.
