Description

Baked Peri Peri Chicken is a spicy and flavorful dish that brings the vibrant tastes of peri peri sauce to a whole roasted chicken. Perfect for a hearty family dinner or a special gathering, this dish combines the heat of peri peri with the succulence of a well-roasted chicken. The honey or sugar adds a touch of sweetness, balancing the spiciness of the sauce. Basting the chicken ensures it stays moist and flavorful, making each bite a delight. Serve with roasted potatoes or a side salad for a complete meal that’s sure to impress.


Ingredients

1 cup peri-peri sauce
2 tsp sugar/honey
1 whole chicken (butterflied)
Salt to taste


Instructions

Pre-heat the oven to 200ºC/400ºF.
Mix together the peri peri sauce and sugar/honey in a small bowl.
Season the chicken generously with salt and transfer to an oven-proof dish. Pour over the peri peri sauce and with a spoon, smear the sauce over the chicken and underneath the skin on the breast. Make sure the chicken is well-covered by the sauce.
Place in the oven and allow to bake for 45-60 minutes, basting every 15-20 minutes. The chicken is ready when the juices run clear when cut.
Remove the chicken and allow to rest, covered with foil, for at least 10 minutes.
Slice and serve the chicken with the potatoes and other side dishes of your choice.
