Ingredients

2 1/2 pounds (1.2 kg) side of salmon
Salt and pepper, to taste
1/2 cup sweet chili sauce
1/4 cup unsalted butter, melted
4 tablespoons hoisin sauce
2 tablespoons fresh lemon juice
3 garlic cloves, minced
1 can pineapple slices, drained (reserve 1/4 cup of juice)
2 tablespoons fresh cilantro, roughly chopped
Lime slices, for serving


Instructions

Preheat your oven to 375°F (190°C). Line a baking sheet with nonstick aluminum foil.
Place the salmon on the sheet, seasoning it with salt and pepper on both sides. Arrange pineapple slices underneath the salmon.
In a small bowl, whisk together sweet chili sauce, melted butter, hoisin sauce, garlic, lemon juice, and the reserved pineapple juice. Pour this mixture over the salmon.
Bake for 15 minutes or until the salmon is flaky and cooked through. For charred edges, broil for the last 5 minutes.
Garnish with chopped cilantro and serve with lime slices.
