2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 (10 oz) package frozen chopped spinach, thawed and drained
1 (8 oz) package cream cheese, softened
1/2 cup sour cream
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1/4 cup breadcrumbs (optional)
Chopped fresh parsley, for garnish


Instructions

Preheat the oven to 375°F (190°C). Grease a baking dish with cooking spray.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.
Add the thawed and drained spinach to the skillet, and cook for another 2-3 minutes until heated through.
In a mixing bowl, combine the cream cheese, sour cream, Parmesan cheese, shredded mozzarella cheese, salt, black pepper, and red pepper flakes. Mix until well combined.
Add the cooked spinach mixture to the bowl with the cheese mixture, and stir until evenly incorporated.
Transfer the mixture to the prepared baking dish, spreading it out evenly.
If desired, sprinkle breadcrumbs evenly over the top of the casserole for added crunch.
Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly and the top is golden brown.
Remove from the oven and let it cool for a few minutes before serving.
Garnish with chopped fresh parsley before serving, if desired.
