Chocolate Chip Banana Bars:

8 tbsp unsalted butter, softened
1 cup light brown sugar
1 egg, room temp
2 tsp vanilla extract
1 cup all-purpose flour
1/2 tsp salt
3 small overripe bananas, mashed
1 cup mini chocolate chips
Caramel Butter Cream:

8 tbsp unsalted butter, softened
3 1/2 cup powdered sugar
4 tbsp caramel sauce
12 tbsp heavy cream
1 tsp vanilla extract
1/8 cup mini chocolate chips, topping


Instructions

Preheat oven to 350°F. Grease an 8×8 baking dish and line with parchment paper.
In a mixing bowl, beat butter and brown sugar till smooth, about three minutes.
Add in egg and vanilla extract. Mix flour and salt in a small bowl and add to wet ingredients, beating till combined.
Mash 2 1/2 bananas and set the remaining half aside. Fold mashed bananas into the mixture till fully combined.
Fold in chocolate chips, saving a handful to sprinkle on top of the batter.
Pour the banana mix into the prepared baking dish, sprinkle remaining chocolate chips on top, and bake for 30-35 minutes.
Remove from oven and let cool for 15 minutes. Flip onto a cooling rack.
Make frosting by beating butter till smooth. Add in powdered sugar, caramel, heavy cream, and vanilla extract, beating till smooth, about three-five minutes.
Slice squares, pipe frosting onto cooled squares, and top with mini chocolate chips. Enjoy!
