1/4 cup light or dark brown sugar
1/4 cup old fashioned oats
1/4 cup flour
4 tablespoons cold butter, cut into cubes
3/4 cup pecans, toasted
Filling
2 tablespoons butter
1/2 cup light or dark brown sugar
1/4 cup orange juice
1 teaspoon cinnamon
1/8 teaspoon salt
6 medium bananas, cut into chunks about an inch long
Serve with:
Vanilla Ice Cream or Whipped Topping


Instructions

For the Topping:
In a medium-sized bowl, combine brown sugar, oats, flour, and butter. Work the mixture with your fingers until crumbly. Stir in toasted pecans. Refrigerate while preparing the filling.
For the Filling:
In a 10-inch cast iron or oven-safe skillet, melt butter over low heat. Add brown sugar and stir until dissolved, about 3 minutes. Mix in cinnamon and salt. Carefully add orange juice (it may splatter), and cook for about one minute until slightly thickened.
Gently toss in banana chunks until coated. Spread evenly in the skillet. Remove from heat, sprinkle the crumble topping over the bananas.
Bake in a preheated 350°F oven until the topping is golden brown, about 20 minutes. Allow to cool in the pan for 10 minutes before serving with ice cream or whipped topping.
