3 ripe bananas
1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar
2 eggs
1 1/2 tbsp milk
1/2 cup raisins
1 1/2 tbsp rum
2 cups all-purpose flour
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt
1/2 cup walnuts, toasted and chopped


Instructions

Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a bowl, mash the ripe bananas with a masher and set aside.
In a separate bowl, combine the granulated sugar, brown sugar, and softened butter using a handheld electric mixer.
Add the eggs and milk to the sugar mixture and mix to combine.
Add the egg and sugar mixture to the mashed bananas and mix well.
In another bowl, whisk together the flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the banana mixture, stirring just until combined.
Fold in the raisins, rum, and toasted walnuts.
Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
