Description

This Bananas Foster Crisp is the perfect marriage of two classic desserts. Sweet, caramelized bananas coated in a rich rum and vanilla sauce are topped with a crunchy oat and walnut crisp. The contrast of the warm, bubbly filling with the golden, crispy topping makes each bite a delightful combination of textures and flavors.

Ingredients

Scale

For the Bananas Foster:
8 medium bananas, sliced into 1/4-inch pieces
4 tablespoons salted butter (plus 1 tablespoon for greasing the baking dish)
1/2 cup heavy cream
1/3 cup light corn syrup
2/3 cup packed light brown sugar
6 tablespoons dark rum
1 teaspoon pure vanilla extract
For the Crisp Topping:
1 cup quick-cooking oats (not instant)
3/4 cup packed light brown sugar
1/2 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup cold salted butter, cubed
1/2 cup roughly chopped walnuts
Additionally:
Vanilla ice cream for serving

Instructions

Prepare the Baking Dish:
Preheat the oven to 350°F (175°C). Grease a 1 1/2 to 2-quart baking dish with 1 tablespoon of melted butter. Set aside.
Make the Bananas Foster:
In a large skillet, melt the 4 tablespoons of butter over medium-high heat. Add the heavy cream, corn syrup, and brown sugar, stirring just until the sugar dissolves.
Remove the skillet from the heat and stir in the rum and vanilla extract. Toss the banana slices in the mixture until fully coated.
Pour the banana mixture into the prepared baking dish.
Make the Crisp Topping:
In a mixing bowl, combine the oats, brown sugar, flour, cinnamon, and salt.
Use a pastry blender to cut in the cold butter until the mixture resembles coarse crumbs. Stir in the chopped walnuts.
Evenly sprinkle the crisp topping over the banana mixture in the baking dish.
Bake:
Bake the crisp in the preheated oven for 30-40 minutes, or until the topping is golden and bubbly.
Serve:
Let the crisp stand for 5 minutes before serving. Add a generous scoop of vanilla ice cream on top for the perfect finishing touch.
