Ingredients:

  • Chicken Breasts: 1 1/2 pounds, thinly sliced
  • Seasonings: Kosher salt, fresh black pepper, and garlic powder
  • Flour Mixture: 1/2 cup flour, 1/4 cup cornstarch
  • Buttermilk Mixture: 1 cup buttermilk, 1 tablespoon hot sauce, 1 large egg
  • Bread Crumbs: 2 cups Panko (more if needed)
  • Oil: Vegetable or canola, for frying
  • Cheese: 12 slices of mozzarella
  • Buns: 12 slider rolls
  • Bang Bang Sauce: Prepared to taste

Directions:

  1. Preparation:
    • Begin by seasoning the chicken breasts evenly on both sides with salt, pepper, and garlic sheet.
    • Set up three stations for breading: one bowl with a mixture of flour and cornstarch, a second with buttermilk, hot sauce, and an egg beaten together, and a third with Panko bread crumbs.
  2. Breading the Chicken:
    • Dredge each piece of chicken first in the flour mixture, shake off excess, then dip into the buttermilk mixture, and finally coat well with the Panko bread crumbs. Ensure each piece is well-coated for the best texture.
  3. Frying:
    • Heat a thin layer of oil in a skillet over medium heat. Fry the breaded chicken in batches to avoid overcrowding, about 2-3 minutes per side or until golden and crispy. Add more oil as needed between batches.
  4. Assembling the Sliders:
    • Once all the chicken is fried, cut the cutlets to fit the slider rolls if necessary. Place a piece of fried chicken on each slider bun, top with a slice of mozzarella cheese while still hot, and drizzle with Bang Bang sauce.
  5. Serving:
    • Serve the sliders warm to ensure the cheese is delightfully melty and the chicken remains crispy.

Ingredients

Scale

1 1/2 pounds thin sliced chicken breasts
Kosher salt, Fresh black pepper, and garlic powder for seasoning the chicken breasts
1/2 cup flour
1/4 cup cornstarch
1 cup buttermilk
1 tablespoon hot sauce
1 large egg
2 cups (or more as needed) Panko bread crumbs
Vegetable or canola oil for frying
12 slices mozzarella cheese
12 slider rolls
Bang Bang Sauce

Instructions

Start by seasoning the chicken on both sides with salt, pepper, and garlic powder.
Set up a breading station with the flour and cornstarch mixed together in one bowl, the buttermilk, hot sauce, and egg in another bowl, and the bread crumbs in a third bowl.
Dredge the seasoned chicken into the flour mixture first, tapping off any excess, then into the buttermilk mixture, letting any excess liquid drip off, and finally into the bread crumbs. Press the breadcrumbs into the chicken to get a nice coating.
Place the breaded chicken on a plate and repeat with the remaining chicken breast.
Once you have the chicken breaded, add a thin layer of oil to a skillet and heat over medium heat.
Once the oil is hot, add the breaded chicken cutlets without overcrowding the skillet. It will take 2 to 3 batches depending on the size of your skillet, adding more oil as needed.
Place the fried chicken cutlets on a paper towel-lined board or plate while you fry the rest of the cutlets.
Once the chicken is fried, whisk together the bang bang sauce in a small bowl and set aside.
Assemble the sliders by cutting the cutlets into smaller pieces and placing them onto the slider buns. Top with a slice of mozzarella cheese while the cutlets are still warm and then drizzle with bang bang sauce and serve.
