15.5 ounces Extra-firm Tofu
¼ cup Cornstarch
¼ cup Panko breadcrumbs
2 teaspoons Garlic powder
1 cup Vegan Mayonnaise
2 tablespoons Sriracha
½ teaspoon White Sugar
¼ teaspoon Salt


Instructions

Remove extra firm tofu from its packaging and drain all excess water. Wrap in a clean kitchen towel or paper towels and gently press to extract moisture. Place a light weight on top for at least 5 minutes.
Preheat the oven to 400º Fahrenheit.
Slice the pressed tofu into about 32 cubes.
In a mixing bowl, combine cornstarch, panko breadcrumbs, and garlic powder.
Toss tofu cubes in the mixture until evenly coated.
Line a sheet pan with parchment paper and spread the tofu cubes evenly.
Bake at 400º Fahrenheit for 40 minutes.
While baking, mix vegan mayonnaise, sriracha, sugar, and salt in a bowl to make the bang bang sauce.
Once baked, toss the crispy tofu in the sauce until well coated.
Serve as desired with garnishments like red pepper flakes and chives.
