24 oz. mini or regular size pork meatballs (frozen)
½ cup sweet chili sauce (purchased or homemade)
¼ cup low-sodium teriyaki sauce
1 tablespoon fish sauce
1 cup shredded carrot
¼ cup chopped cilantro
¼ cup thinly sliced jalapeño
Optional: ¼ cup chopped mint, pickled red onions, lime wedges


Instructions

Heat a 12″ cast iron skillet over medium heat. Add meatballs and cook for about 3 to 5 minutes, turning every minute or so.
In a small bowl, mix sweet chili sauce, teriyaki sauce, and fish sauce. Pour this mixture over the meatballs in the skillet, tossing to coat evenly.
Cover and let cook for 10 minutes or until the meatballs are thoroughly warmed and reach an internal temperature of 165° F. Stir occasionally.
If desired, uncover, increase heat to medium-high and cook until the sauce thickens. Remove from heat.
Top with shredded carrots, cilantro, and jalapeño slices. Optionally, add fresh mint, and serve with pickled red onions and lime wedges for squeezing.
