- 1 ½ cups (150g) graham cracker, digestive biscuit, or vanilla wafer crumbs

- ⅓ cup (75g) unsalted butter, melted
- 1 and ¼ cups dulce de leche
- 3 ripe, firm bananas
- 1 cup (240 ml) cold heavy cream
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- ½ cup grated chocolate/shredded coconut/chopped pecans for topping (optional)
Instructions
- Prepare the Crust: In a medium bowl, combine the crumbs, sugar, and melted butter. Mix until the mixture is evenly moistened. Press this mixture into the bottom and up the sides of a 9-inch pie pan. To firm up the crust, refrigerate covered for one hour or bake at 350°F for 5 minutes and then cool to room temperature.
- Add the Dulce de Leche: Gently spread the dulce de leche over the crust, making sure to create a smooth, even layer.
- Arrange the Bananas: Peel and thinly slice the bananas. Lay these slices over the dulce de leche, covering it entirely.
- Whip the Cream: In a mixing bowl, use a mixer fitted with a whisk attachment to whip the cold heavy cream, sugar, and vanilla extract. Beat on high speed until soft peaks form, being careful not to over-whip.
- Final Assembling: Spread the whipped cream over the banana layer gently. If desired, sprinkle the top with grated chocolate, shredded coconut, or chopped pecans.
