8 chicken thighs, bone-in and skin-on
1 large onion, peeled and sliced into rings
1 cup of your favorite barbecue sauce
2 tablespoons olive oil
1 tablespoon apple cider vinegar
2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and freshly ground black pepper to taste
Chopped fresh parsley for garnish (optional)


Instructions

Preheat the oven to 375°F (190°C) and line a large baking sheet with aluminum foil.
In a bowl, combine barbecue sauce, olive oil, apple cider vinegar, smoked paprika, garlic powder, and onion powder.
Season chicken thighs with salt and pepper and place them skin-side down on the baking sheet.
Brush half of the sauce over the chicken, top with onion rings.
Bake for 25 minutes, turn the chicken, and apply the remaining sauce.
Bake for another 20-25 minutes or until the internal temperature reaches 165°F (75°C).
Broil for 3-4 minutes for extra caramelization if desired.
Rest the chicken for 5 minutes before serving, garnish with parsley if using.
