Indulge in the creamy, burnt-sugar goodness of Basque Cheesecake with this easy-to-follow recipe. This dessert is perfect for any occasion and will leave your taste buds begging for more!

Ingredients:

  • 2 pounds (four 8oz blocks) full-fat cream cheese, room temperature
  • 1 1/2 cups (300g) granulated sugar
  • 5 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 3/4 cups (420g) heavy cream
  • 1 tsp salt
  • 1/4 cup (33g) all-purpose flour

Directions:

  1. Preparation: Preheat the oven to 400F (200C) and butter the inside of a 9-inch springform pan. Line the bottom and sides with two layers of parchment paper, ensuring they extend about 2 inches above the edge of the pan.
  2. Mixing the Batter: In a large bowl, cream together the cream cheese and granulated sugar on medium-low speed using a hand or stand mixer with the paddle attachment. Mix in the eggs one at a time on low speed, then add the vanilla extract.
  3. Adding Cream and Dry Ingredients: With the mixer on low speed, pour the heavy cream in a slow and steady stream until smooth. Sift in the flour and salt, then fold gently to combine.
  4. Baking: Pour the batter into the prepared pan and smooth the top. Bake for 60-65 minutes, or until the top is completely burnt and the center has a slight jiggle to it.
  5. Cooling and Serving: Allow the cheesecake to cool in the pan at room temperature for about an hour. Remove from the pan and slice into wedges. For best results, refrigerate for a couple of hours to set before serving.

Description

This Basque Cheesecake, with its deeply caramelized top and creamy interior, is a dessert that brings together rich flavors and a unique texture. The burnt exterior adds a delightful contrast to the smooth and luscious filling, making each bite a sublime experience.

Ingredients

Scale

2 pounds (four 8oz blocks) full fat cream cheese, room temp
1 1/2 cups (300g) granulated sugar
5 large eggs, room temp
1 tsp vanilla extract
1 3/4 cups (420g) heavy cream
1 tsp salt
1/4 cup (33g) all-purpose flour

Instructions

Preheat the oven to 400F and butter the inside of a 9 springform pan.
Press two layers of parchment paper into the bottom and up the sides. They should stick up about 2 inches above the edge of the pan.
Cream together the cream cheese and sugar on medium low speed using a hand or stand mixer with the paddle attachment.
Mix in the eggs one at a time on low speed and then the vanilla.
Pour the heavy cream in a slow and steady stream while the mixer is on low speed. Once smooth, sift in your flour and salt and fold to combine.
Bake for 60-65 minutes or until the top is completely burnt and it has a slight jiggle to it.
Let it cool to room temperature for about an hour then remove from the pan and slice. You can also leave it in the pan and place it in the fridge for a couple hours to completely set (my personal preference). Enjoy!
