Ingredients
For the mushrooms:
1 lb (450g) oyster mushrooms, shredded 🍄
2 tbsp olive oil 🫒
1 onion, finely chopped 🧅
2 cloves garlic, minced 🧄
1 cup BBQ sauce 🍖
1 tbsp soy sauce 🥢
1 tsp smoked paprika 🌶️
Salt and pepper to taste 🧂
For serving:
6 burger buns 🍔
Coleslaw (optional) 🥗
Pickles (optional) 🥒
Instructions
1️⃣ Preheat your oven to 375°F (190°C). 🔥
2️⃣ Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until they are soft and fragrant, about 5 minutes. 🍲
3️⃣ Add the shredded oyster mushrooms to the skillet and cook for about 10 minutes, until they release their moisture and start to brown. 🍄
4️⃣ Stir in the BBQ sauce, soy sauce, and smoked paprika, mixing well to coat the mushrooms evenly. Season with salt and pepper to taste. 🍖
5️⃣ Transfer the skillet to the preheated oven and bake for 15 minutes, allowing the flavors to meld and the sauce to thicken. 🕒
6️⃣ Remove from the oven and let cool slightly. 🍽️
7️⃣ Serve the pulled mushrooms on burger buns, topped with coleslaw and pickles if desired. Enjoy! 🍔🥗
