- 1 pound flank steak or skirt steak, thinly sliced against the grain
- 1 tablespoon low sodium soy sauce (plus 6 tablespoons for the sauce)
- 1 tablespoon rice wine vinegar (plus 2 tablespoons for the sauce)
- 3 cups broccoli
- 4 cloves garlic, minced
- 3 packets ramen noodles, seasoning packet discarded (3 ounces each)
- 1/4 cup water
- 3/4 cup low sodium beef broth
- 1 tablespoon ginger, minced
- 2 teaspoons sesame oil
- 2 tablespoons cornstarch
- 6 tablespoons oyster sauce
- 1 tablespoon brown sugar
- 1/2–1 teaspoon Sriracha (optional, to taste)
- Sesame seeds for garnish (optional)
Instructions
- Prepare the Sauce In a medium bowl, whisk together water, beef broth, minced ginger, sesame oil, cornstarch, oyster sauce, soy sauce, rice wine vinegar, brown sugar, and Sriracha until well combined. Set aside.
- Marinate the Beef In another medium bowl, combine the sliced steak with 1 tablespoon of soy sauce and 1 tablespoon of rice wine vinegar. Let it marinate for 1 hour or leave it overnight in the refrigerator to enhance the flavors.
- Cook the Ramen Noodles Boil the ramen noodles according to the package instructions, then drain and set aside.
- Cook the Broccoli Heat 1 tablespoon of oil in a large skillet over medium heat. Add the broccoli and sauté until tender yet crisp, about 3-4 minutes. Remove from skillet and set aside.
- Cook the Beef Heat the remaining tablespoon of oil in the same skillet. Add the marinated beef and sauté quickly until just browned, about 1-2 minutes. Add the minced garlic, and cook for another minute.
- Combine and Simmer Add the cooked broccoli back into the skillet along with the prepared sauce. Stir well to combine and let the sauce simmer until it thickens slightly, about 1-2 minutes.
- Add Noodles and Serve Toss the cooked ramen noodles into the skillet, stirring to coat them evenly in the sauce. Serve the stir-fry immediately, garnished with sesame seeds if using.
