Berries and Cream

Ingredients

Scale

1 cup each of raspberries, blackberries, blueberries, and strawberries 🍓
½ cup sugar 🥄
Handful of fresh mint leaves, julienned 🌿
1 cup heavy whipping cream 🥛
¼ cup powdered sugar 🍚


Instructions

1️⃣ Prepare the Berries: In a large bowl, sprinkle ½ cup of sugar over all the berries and let them sit for an hour. This will help release their natural juices. 🍓🫐

2️⃣ Make the Caramel Dust (Optional):

Line a rimmed baking sheet with Silpat or coat with cooking spray.
Bring 2 cups of white sugar to a boil over medium heat. Swirl (don’t stir) until the sugar dissolves and turns a caramel color.
Pour the caramel onto the baking sheet to harden (~1 hour), then break into shards and process into a fine dust. 🍯
3️⃣ Whip the Cream: Use an electric mixer to beat the heavy cream and powdered sugar until medium peaks form. This will make the cream light and fluffy. 🎂

4️⃣ Combine: Fold in the mint leaves and the berries into the whipped cream. Mix gently to ensure the berries are evenly distributed without crushing them. 🌿🍓

5️⃣ Serve: Place the berries and cream mixture into serving bowls. If you made caramel dust, sprinkle it on top for an extra touch of sweetness and crunch. 🍽️
