Brownie Base:
1 cup (175g) chocolate chips
1/3 cup (60g) olive oil
1 tsp instant coffee
2 large eggs, room temperature
3/4 cup (169g) white granulated sugar
1 tsp vanilla extract
1/4 cup (20g) Dutch-process cocoa powder
3/4 cup (98g) unbleached all-purpose flour
1/2 tsp salt
1/4 tsp baking powder
Cream Cheese Frosting:
1/4 cup (58g) plant-based butter, softened
4 oz (113g) plant-based cream cheese, cold
1/2 tsp vanilla extract
2 1/2 cups (300g) powdered sugar
Toppings:
12 cups fresh berries (strawberries, cherries, raspberries)


Instructions

Preheat the oven to 350°F (177°C) and spray a 12″ pizza pan with non-stick spray.
For the brownie: Microwave chocolate chips, olive oil, and instant coffee in 15-30 second intervals, stirring until melted. Mix eggs and sugar in a stand mixer until light. Add vanilla and the chocolate mixture. Sift in cocoa, flour, salt, and baking powder; mix gently. Spread in pan and bake for 9-11 minutes. Cool completely.
For the frosting: Beat softened butter, cold cream cheese, and vanilla until smooth. Gradually add powdered sugar. Spread on cooled brownie, leaving a small border.
Top with fresh berries.
