Ingredients
3 handfuls of arugula
1 avocado
1/2 cucumber
125 grams blueberries (one pack)
125 grams blackberries (one pack)
50 grams feta cheese
1/2 lemon
Some fresh mint leaves
Salt & pepper
Vinaigrette:
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp honey
Instructions
Thinly slice the cucumber using a mandoline.
Halve the avocado, remove the pit and skin, and then slice each half.
In a small bowl, mix all the vinaigrette ingredients.
Assemble the salad by adding arugula, cucumber slices, blueberries, avocado, blackberries, and crumbled feta to a large bowl.
Drizzle with lemon juice and the prepared vinaigrette.
Garnish with fresh mint, season with salt and pepper to taste, and serve immediately.
