2 3/4 cups (358g) all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup (224g) unsalted butter, room temperature
1 cup + 2 tbsp (233g) granulated sugar
2 tbsp (28g) light brown sugar
1 large egg
2 tsp vanilla extract
1/4 cup sugar (additional for rolling)


Instructions

Preheat the oven to 350°F (180°C). Line baking sheets with parchment paper or silicone mats.
In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
In a large mixing bowl, cream together butter and both sugars on medium speed until light and fluffy, about 2-3 minutes.
Add the egg and vanilla extract, mixing well after each addition.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be thick. Use a spatula to form it into a cohesive ball.
Scoop the dough into 1 1/2 tablespoon-sized balls. Roll each ball in additional granulated sugar.
Place the dough balls on the prepared baking sheets, spacing them 2 inches apart.
Bake for 7-8 minutes until the cookies are set and slightly golden at the edges. They will puff up and appear soft but will settle as they cool.
Allow to cool on the baking sheets for 4-5 minutes before transferring to a wire rack to cool completely.
