Ingredients

1 and 1/2 cups plain flour
1 and 1/4 cups milk
4 tbsp melted butter
1/4 cup sugar
1/4 cup cocoa powder
3 eggs
1/4 cup melted chocolate
Pinch of salt
Double cream (for serving)
1 cup fresh cherries, pitted
1/4 cup sugar (additional for syrup)
2 tbsp water or kirsch (for cherry syrup)
Icing sugar (for dusting)
Fresh cherries (for garnish)


Instructions

In a mixing bowl, combine the flour, cocoa powder, and salt.
In a separate bowl, whisk together the eggs, milk, melted butter, and melted chocolate.
Gradually sift the dry ingredients into the wet, mixing to prevent lumps.
Heat a lightly oiled frying pan over medium heat. Pour in enough batter to coat the bottom of the pan. Cook for about a minute, then loosen and flip the crepe to cook the other side.
Repeat with remaining batter.
For the cherry syrup: In a pan, combine pitted cherries, additional sugar, and water or kirsch. Heat until the sugar dissolves and the cherries break down, about 5 minutes. Reduce until syrupy.
Strain the mixture, reserving both syrup and cherries separately.
Whip the double cream to stiff peaks.
To assemble: Spread whipped cream on each crepe, add cherry pieces, drizzle with cherry syrup, fold, and dust with icing sugar. Garnish with fresh cherries.
