Cake:

1 ¾ cups all-purpose flour
2 Tbsp natural cocoa powder
1 tsp baking powder
½ tsp baking soda
½ tsp salt
¾ cup unsalted butter, softened
1 cup + 2 Tbsp granulated sugar
2 eggs
¾ cup sour cream
1 ½ tsp vanilla extract
½ tsp vinegar
½ cup buttermilk
1 Tbsp blue food coloring
½ tsp violet food coloring
Cream Cheese Frosting:

10 Tbsp unsalted butter, room temperature
10 oz cream cheese
1 ½ tsp vanilla extract
¼ tsp almond extract
5 cups powdered sugar
Fresh blueberries for layering and decoration


Instructions

Preheat the oven to 350°F (175°C). Prepare four 6-inch round cake pans by lining them with parchment paper and spraying with nonstick spray.
In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, followed by the sour cream, vanilla, and vinegar.
Gradually mix in the dry ingredients, alternating with the buttermilk, until just combined. Stir in the blue and violet food colorings until the desired color is achieved.
Divide the batter evenly among the prepared cake pans. Bake for 25-27 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely in the pans.
For the frosting, beat together the butter, cream cheese, vanilla, and almond extracts in a large bowl until smooth. Gradually add the powdered sugar and beat until creamy and spreadable.
To assemble the cake, place one layer on a serving plate and spread with frosting. Sprinkle fresh blueberries over the frosting before adding the next layer. Repeat with remaining layers.
Optionally, coat the sides of the cake with frosting and press cake crumbs into the sides for decoration. Garnish with additional blueberries.
