1 cup flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/3 cup butter, softened
1/2 cup milk
1 egg
3/4 cup fresh blueberries
Optional: lemon glaze, lemon zest, additional fresh blueberries, powdered sugar, and whipped cream for serving


Instructions

Preheat the oven to 350°F (175°C).
Coat the cake pan with baking spray and dust with all-purpose flour, shaking out the excess.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
Add vanilla extract, softened butter, milk, and egg. Beat with an electric mixer on medium speed for about two minutes.
Gently fold in the fresh blueberries.
Evenly distribute the batter among the prepared pan cavities, filling each about 3/4 full.
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Let cakes cool in the pan before loosening with fingers and inverting onto a serving plate.
Serve topped with fresh blueberries, a drizzle of lemon glaze, a sprinkle of lemon zest, and a dusting of powdered sugar. Add whipped cream if desired.
