Description

These Blueberry Cheesecake Overnight Oats bring together the tangy creaminess of cheesecake and the sweet, refreshing burst of blueberries. The oats, chia seeds, and Greek yogurt create a smooth, thick texture, while the cream cheese adds that rich, indulgent cheesecake flavor. Whether you prefer fresh or mashed blueberries, this recipe is the perfect make-ahead breakfast that will satisfy your morning cravings.

Ingredients

Scale

2 cups whole rolled oats
2 tablespoons chia seeds
⅓ cup cream cheese, softened
⅓ cup plain Greek yogurt
3 tablespoons maple syrup
2 teaspoons vanilla extract
2 cups almond milk
2 cups blueberries, fresh or frozen

Instructions

In a large mixing bowl, combine the oats, chia seeds, cream cheese, Greek yogurt, maple syrup, vanilla extract, and almond milk. Whisk vigorously until the mixture is smooth. Allow it to thicken on the counter for 5-10 minutes.
If using frozen blueberries, heat them in a microwave-safe bowl for about 30 seconds until softened. Mash them with a fork to create a jam-like consistency.
Evenly distribute the oat mixture between 5 jars or containers. Layer the mashed or fresh blueberries on top of each jar, or mix them into the oats if you prefer.
Seal the jars with lids or cover tightly with plastic wrap. Place them in the refrigerator and let soak for at least 4 hours or overnight to allow the oats to absorb the liquid.
When ready to serve, add any desired toppings and enjoy cold or warmed for 30 seconds in the microwave.
