Ingredients

½ cup protein powder*
½ cup coconut flour
3 Tbsp granulated sugar of choice**
4 Tbsp cream cheese (dairy or dairy-free)
¼ cup blueberry puree*** (see note on color)


Instructions

Prepare the Blueberry Puree: Mash the blueberries or puree them in a small blender until smooth.
In a mixing bowl, combine the protein powder, coconut flour, blueberry puree, and cream cheese. Use your hands to knead the mixture until a dough forms.
Taste the dough and add sugar if desired, adjusting the sweetness to your preference.
If the dough is too soft, add more coconut flour, one teaspoon at a time, until the desired consistency is reached. If the dough is too thick, add a teaspoon or more of blueberry puree, water, or almond milk to soften it.
Roll the dough into tablespoon-sized balls and place them on a lined tray or plate.
Refrigerate the protein balls for at least 15 minutes to set.
Store in an airtight container in the refrigerator until ready to enjoy.
