Ingredients
Blueberry Filling:
18 ounce fresh blueberries
¼ cup sugar
¼ cup brown sugar
Zest from 1 lemon
1 tablespoon lemon juice
1 tablespoon cornstarch
Cream Cheese Filling:
8 ounce cream cheese, softened
1 egg yolk
⅓ cup sugar
1 teaspoon vanilla extract
1 teaspoon lemon juice
Puff Pastry:
2 boxes puff pastry sheets
Egg Wash:
1 egg
1 tablespoon water
Topping:
¼ cup powdered sugar
Instructions
Preheat oven to 375°F and line a baking sheet with parchment paper.
Blueberry Filling: Rinse blueberries and place in a medium saucepan. Add sugars, lemon zest, juice, and cornstarch. Stir and heat over medium until thickened. Let cool.
Cream Cheese Filling: Beat cream cheese until smooth. Mix in egg yolk, sugar, vanilla, and lemon juice.
Roll out pastry sheets on a floured surface, place one sheet on baking sheet, spread half of each filling, top with another pastry sheet, and cut into crescents.
Egg Wash: Mix egg with water and brush over pastries.
