Blueberry Delight Biscuits offer a mouthwatering breakfast or snack option that combines the freshness of blueberries with the comforting taste of homemade biscuits. Topped with a vanilla and lemon glaze, these fluffy delights are perfect for any occasion where a sweet, baked treat would brighten the day.

Ingredients

Scale
  • 2 cups flour
  • 1 cup cold milk
  • 1 cup sugar
  • 5 tablespoons cold or frozen butter
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 3 ounces blueberries (fresh or dried)
  • 1 cup powdered sugar
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a large bowl, mix together the flour, salt, sugar, and baking powder.
  3. Add the cold milk and blueberries to the dry ingredients and blend gently.
  4. Freeze a stick of butter, then break it into small chunks and distribute evenly over the dough.
  5. Fold and knead the dough several times to distribute the butter chunks evenly.
  6. On a floured surface, roll the dough to a thickness of about 1/4 to 1/8 inch, and use a biscuit cutter to form about six biscuits.
  7. Place the biscuits on a parchment-lined baking sheet and bake for 7-12 minutes, or until golden brown.
  8. Melt 1 tablespoon of butter and brush it over the warm biscuits.
  9. Prepare the glaze by mixing the powdered sugar, water, vanilla extract, and lemon juice in a small bowl. Drizzle this glaze over the warm biscuits.
