Ingredients
2 naan flatbreads
1 teaspoon olive oil
1 cup thinly sliced red onion
Kosher salt to taste
Pinch of red pepper flakes
2 tablespoons honey
1/2 cup ricotta cheese
1/2 cup feta cheese
1 cup fresh blueberries
Micro arugula or baby arugula for garnish
Instructions
Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange the naan flatbreads on the sheet and lightly spray or brush with water. Set aside.
Caramelize Onions: Heat the olive oil in a medium pan over medium-low heat. Add the sliced red onion and season with a pinch of salt and red pepper flakes. Cook the onions for about 3-5 minutes until they start to soften and wilt. Stir in the honey and continue cooking until the onions are caramelized. Remove from heat.
Prepare the Cheese Mixture: In a small bowl, stir together the ricotta and feta cheese until well combined.
Assemble the Pizzas: Spread the ricotta and feta mixture evenly over each naan. Top with the honey-caramelized onions and sprinkle the fresh blueberries on top.
Bake: Place the naan pizzas into the preheated oven and bake for about 10 minutes, or until the blueberries are just about to burst, the cheese has softened, and the naan is golden and toasted.
Garnish and Serve: Remove the pizzas from the oven and garnish with micro arugula or baby arugula. Serve immediately and enjoy!
