Ingredients

3 cups blueberries, fresh or frozen (use 1 cup frozen and 2 cups fresh)
2 tablespoons fresh lemon juice (about ½ of a lemon)
¼ to 1/3 cup honey, depending on sweetness preference


Instructions

Place all ingredients in a blender or food processor and puree until smooth.
Pour the mixture into popsicle molds, leaving about ¼ inch of space at the top.
Freeze the molds for about 1 hour, then add the lid and insert popsicle sticks, leaving about 1 ¼ inches sticking out.
Freeze for an additional 4-6 hours, or overnight.
To remove, run the mold under warm water for a few seconds and gently pull the popsicles out.
