Made with just four simple ingredients—oats, bananas, peanut butter, and blueberries—they offer a chewy texture with a burst of fresh blueberry flavor in every bite. The natural sweetness of the bananas and the richness of the peanut butter make these cookies satisfying and nutritious.
Ingredients
2 cups rolled oats (gluten-free, if needed)
2 large bananas, mashed
1/2 cup peanut butter
1/4 cup blueberries
Instructions
Preheat the Oven: Preheat your oven to 180°C (350°F). Line a cookie sheet or baking tray with parchment paper and set it aside.
Mix the Ingredients: In a large mixing bowl, combine the rolled oats, mashed bananas, and peanut butter. Mix until well combined. Gently fold in the blueberries using a rubber spatula.
Form the Cookies: Form 12 balls of dough and place them on the lined baking tray. Press each ball into a cookie shape using your hands or the back of a spoon.
Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden and the centers are just cooked.
Cool the Cookies: Remove the cookies from the oven and allow them to cool on the baking tray for 10 minutes before transferring them to a wire rack to cool completely.
