Blueberry Sauce:

3 cups fresh blueberries, divided 🍇
1/2 cup sugar 🍬

2 tablespoons cornstarch dissolved in 3 tablespoons of water 🌽
1/2 teaspoon vanilla extract 🌼
1 cup fresh blueberries (reserved) 🍇
Cream Cheese Filling:

8 oz cream cheese, softened 🧀
1/2 cup powdered sugar 🍥
1 teaspoon lemon zest 🍋
1 teaspoon fresh lemon juice 🍋
French Toast:

1 pound brioche loaf, sliced 🍞
1/2 cup milk 🥛
1 tablespoon sugar 🍬
1 teaspoon cinnamon 🌰
1 teaspoon vanilla extract 🌼
Pinch of salt 🧂
2 tablespoons butter 🧈
3 large eggs 🥚


Instructions

1️⃣ Prepare the Blueberry Sauce:
Add 2 cups of blueberries, sugar, and water to a saucepan. Heat over medium until the mixture simmers and the blueberries start to burst. 🌊🍇

2️⃣ Stir in the dissolved cornstarch and increase the heat to medium-high. Bring the mixture to a boil and let it boil for 2 minutes. Remove from heat and stir in the remaining 1 cup of fresh blueberries and vanilla extract. Set aside. 🔥🍇

3️⃣ Make the Cream Cheese Filling:
In a medium-sized bowl, mix the softened cream cheese and powdered sugar with a hand mixer until well combined. Stir in the lemon juice and lemon zest. 🍋🧀

4️⃣ Prepare the French Toast:
Heat a nonstick griddle to medium heat. 🔥

5️⃣ In a medium-sized bowl, whisk together the eggs, milk, sugar, cinnamon, vanilla, and a pinch of salt. 🍳🥛

6️⃣ Spread the cream cheese mixture over 6 slices of brioche bread. Top with fresh blueberries, pressing them gently into the cream cheese. Cover each slice with another piece of brioche bread, pressing them together gently to form sandwiches. 🍞🍇

7️⃣ Add butter to the preheated griddle. Dip each assembled French toast sandwich into the egg mixture, letting the excess drip back into the bowl. Place the sandwiches on the hot griddle and cook until golden brown on both sides and the cream cheese is warm and melty. 🍳🧈
