Ingredients

1 flour tortilla (8 inches)
2 eggs
1/4 cup cheddar cheese, grated
1 Tbsp olive oil
Salt and pepper, to taste
Protein option: 3 oz breakfast sausage


Instructions

In a skillet over medium-high heat, cook the sausage until browned and cooked through. Remove from heat and set aside. If there’s excess grease, wipe it up.
In a small bowl, whisk together the eggs, salt, and pepper.
In the same skillet, add the whisked eggs. Cook over low heat until the eggs are almost set.
Sprinkle 2 tablespoons of cheese over the eggs, then place the tortilla on top of the cheese.
Once the eggs and cheese stick to the tortilla, use a spatula to flip the tortilla over.
Add the remaining cheese on top of the eggs and place the cooked sausage on one half of the tortilla.
Fold the tortilla in half and cook until golden brown.
Serve hot and enjoy!
