These Broccoli Cheddar Baked Egg Bites are a nutritious and delicious breakfast option, packed with protein from eggs, cottage cheese, and cheddar cheese. The addition of broccoli and spinach provides a healthy dose of greens, making these bites perfect for meal prep or an easy on-the-go snack. They’re light, fluffy, and flavorful!

9 large eggs
1 cup cottage cheese
1 cup cheddar cheese, divided
1 tsp black pepper
1/2 tsp salt
1 head broccoli, chopped
1 cup spinach, chopped


Instructions

Preheat your oven to 300°F (150°C) and prepare a silicone muffin tray with non-stick spray.
In a blender, add the eggs, cottage cheese, half of the cheddar cheese, salt, and pepper. Blend until smooth and well-combined.
Pour the egg mixture evenly into the prepared muffin tray, filling each slot halfway (the egg bites will rise as they bake).
Evenly distribute the chopped broccoli and spinach over the egg mixture in the muffin tray. Then sprinkle the remaining cheddar cheese on top.
Optionally, sprinkle with a bit more salt and pepper. Bake for 30 minutes at 300°F.
Remove from the oven and allow the egg bites to cool slightly before removing them from the muffin tray.
