Ingredients

153g all-purpose flour
10g matcha powder
¼ tsp baking soda
¼ tsp salt
100g unsalted butter
70g white sugar
50g raw or light brown sugar
1 large egg
120g white chocolate, chopped
Optional: extra white chocolate for topping


Instructions

Brown the butter in a small saucepan over medium heat until golden with toasted milk solids. Set aside to cool.
In a mixing bowl, whisk together the flour, matcha, baking soda, and salt.
In a separate bowl, whisk the browned butter, white sugar, and raw sugar together. Add the egg and whisk until the mixture lightens in color.
Gradually combine the dry ingredients with the wet mixture until fully incorporated. Fold in the white chocolate chunks.
Scoop the dough onto a parchment-lined baking sheet and refrigerate for at least 30 minutes.
Preheat the oven to 175°C (350°F). Bake the cookies for 8 minutes. Add optional extra white chocolate pieces on top, and continue baking for an additional 5 minutes.
Let the cookies cool on a wire rack before enjoying.
