2 teaspoons baking powder
¼ teaspoon salt
¾ cup mashed ripe banana (about 2 small bananas)
2 tablespoons melted unsalted butter, plus more for greasing the griddle
1 large egg
¾ cup buttermilk
¼ cup packed brown sugar (preferably dark)
1 teaspoon pure vanilla extract
To serve: butter, maple syrup, sliced banana, walnuts, and/or chocolate chips.


Instructions

In a large bowl, mix flour, baking powder, and salt.
In a separate bowl, whisk together mashed bananas, melted butter, egg, buttermilk, brown sugar, and vanilla extract.
Combine the wet ingredients with the dry ingredients using a rubber spatula just until mixed, ensuring not to overmix.
Heat a greased griddle over medium-low heat. Pour ⅓ cup portions of the batter onto the griddle and spread into even circles.
Cook until bubbles form on the surface, then flip and continue cooking until golden brown.
