Description
Buffalo Chicken Chili is a rich, spicy, and creamy dish that brings together the bold flavors of Buffalo wing sauce, tender ground chicken, and the tang of ranch seasoning. The addition of cream cheese creates a smooth, luxurious texture, while fire-roasted tomatoes add depth and smokiness. This chili is perfect for anyone who loves a little heat and a lot of flavor.
Ingredients
1 lb ground chicken
2 cups chicken stock
1 (15-ounce) can Navy beans, rinsed and drained
1 packet ranch seasoning
1/4 cup Buffalo wing sauce
1 cup corn kernels (frozen or fresh)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon celery salt
1/4 teaspoon salt
1/4 teaspoon black pepper
8 ounces cream cheese, softened and cubed
1 (14.5-ounce) can fire-roasted tomatoes
1 tablespoon cilantro, chopped (plus more for garnish)
1/2 cup Bleu cheese crumbles
Instructions
Preheat a large saucepan over medium heat. Add the ground chicken, breaking it up with a spoon or chopper, and cook until fully cooked through.
Pour in the chicken stock, followed by the Navy beans, corn kernels, ranch seasoning, and Buffalo wing sauce. Stir to combine.
Add the onion powder, garlic powder, celery salt, salt, and black pepper. Stir well to mix the spices.
Add the cream cheese cubes and stir frequently to incorporate, allowing the cream cheese to melt and create a creamy texture.
Add the fire-roasted tomatoes and chopped cilantro, stirring to combine.
Continue cooking over medium heat, stirring often, until the chili is well blended and heated through.
Serve warm, topped with additional cilantro and a sprinkle of Bleu cheese crumbles for extra flavor.
