Ingredients

600 g bulgur
140 g raisins
100 g crushed and roasted hazelnuts
1 liter chicken broth
4 carrots
100 g pumpkin seeds
Juice of one lemon
5 tablespoons sunflower oil
A bunch of mint


Instructions

Place the bulgur and raisins in a large dish, pour over the hot chicken broth, and cover with plastic wrap for 20 to 30 minutes until all the broth is absorbed and has swelled the bulgur and raisins.
Peel and grate the carrots. Add them to the salad along with the pumpkin seeds, hazelnuts, lemon juice, and sunflower oil. Mix well and adjust the seasoning.
Chop the mint leaves and add them to the salad. You can adjust the amount of mint according to your taste.
Chill the salad in the refrigerator until ready to serve.
