The juicy steak bites, seared to perfection, are complemented by the crispy, golden-brown potatoes infused with garlic and aromatic herbs. The richness of the butter brings everything together, creating a savory dish that’s both comforting and satisfying.

Ingredients

Scale

4 tablespoons butter, divided
1 tablespoon olive oil
1 pound Yukon Gold or Red Potatoes, cut into ½ inch chunks
4 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried rosemary
½ teaspoon salt
½ teaspoon black pepper
1 ½ pounds sirloin steak, cut into 1-inch chunks
Fresh chopped parsley (optional, for garnish)

Instructions

To Make the Butter Steak Bites with Garlic Herb Potatoes:
Heat a cast iron skillet or non-stick skillet over medium-high heat.
Add 2 tablespoons of butter and 1 tablespoon of olive oil to the pan. Heat until the butter is fully melted and sizzling.
Add the diced potatoes, minced garlic, oregano, rosemary, salt, and pepper to the skillet. Cook for about 4-5 minutes, stirring occasionally, until the potatoes start to brown.
Stir the potatoes and cook for an additional 4-5 minutes, or until they are fork-tender and golden brown. Remove the potatoes from the pan and set aside in a bowl.
Return the skillet to the stove and increase the heat to high. Add the remaining 2 tablespoons of butter.
Once the butter is melted and the pan is hot, add the steak bites in a single layer. Cook for 1 minute without turning to achieve a good sear on one side.
Stir the steak bites and cook for another 1-2 minutes, or until they reach your desired level of doneness. Be careful not to overcook them.
Remove the skillet from the heat and add the cooked potatoes back into the pan. Toss everything together to combine the flavors.
Garnish with fresh chopped parsley, if desired, and serve immediately.
Serving: Serve the steak bites and potatoes hot, straight from the skillet, for a delicious and satisfying meal.
Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave.
