- 2 cups flour
- 2 ½ teaspoons baking powder
- 1 ¼ teaspoon salt
- 4 tablespoons cold butter, cut into small pieces
- 4 tablespoons (2 ounces) good quality goat cheese, cut into small pieces
- 1 cup buttermilk
- 2 tablespoons butter, divided, to grease the pan and top the muffins
- ¼ cup freshly grated Parmesan cheese
Instructions
- Preheat your oven to 425ºF. Place a 10-inch cast iron skillet into the oven to heat.
- Sift the flour, baking powder, and salt into a medium bowl.
- Add the cold butter and goat cheese to the bowl. Using your fingers, pinch and mix until the consistency resembles coarse cornmeal.
- Pour in the buttermilk and gently fold the mixture to form the dough. If the dough is too dry, add an extra tablespoon of buttermilk.
- Carefully remove the hot skillet from the oven. Add 1 tablespoon of butter, swirling to coat the bottom evenly.
- Turn the dough out onto a floured surface. Knead a few times until smooth and then pat it into a rectangle about 1 ½ inches high. Use a 2 ½-inch biscuit cutter to cut out rounds from the dough.
- Position the rounds in the skillet. Brush the tops with the remaining melted butter. Bake for 14-16 minutes until lightly browned.
- Once done, sprinkle the hot muffins with Parmesan cheese and serve warm.
