  • 2 cups flour
  • 2 ½ teaspoons baking powder
  • 1 ¼ teaspoon salt
  • 4 tablespoons cold butter, cut into small pieces
  • 4 tablespoons (2 ounces) good quality goat cheese, cut into small pieces
  • 1 cup buttermilk
  • 2 tablespoons butter, divided, to grease the pan and top the muffins
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Preheat your oven to 425ºF. Place a 10-inch cast iron skillet into the oven to heat.
  2. Sift the flour, baking powder, and salt into a medium bowl.
  3. Add the cold butter and goat cheese to the bowl. Using your fingers, pinch and mix until the consistency resembles coarse cornmeal.
  4. Pour in the buttermilk and gently fold the mixture to form the dough. If the dough is too dry, add an extra tablespoon of buttermilk.
  5. Carefully remove the hot skillet from the oven. Add 1 tablespoon of butter, swirling to coat the bottom evenly.
  6. Turn the dough out onto a floured surface. Knead a few times until smooth and then pat it into a rectangle about 1 ½ inches high. Use a 2 ½-inch biscuit cutter to cut out rounds from the dough.
  7. Position the rounds in the skillet. Brush the tops with the remaining melted butter. Bake for 14-16 minutes until lightly browned.
  8. Once done, sprinkle the hot muffins with Parmesan cheese and serve warm.
