  • 3/4 cup butter, room temperature + 1 tablespoon
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 3/4 cups all-purpose flour
  • 1 package butterscotch chips (6 oz)
  • 1 cup finely chopped pecans
  • 3 cups powdered sugar
  • 3 to 4 tablespoons milk or water
  • 1 teaspoon rum extract
  • 1/2 cup chopped pecans

Instructions

  1. Cream the butter with the powdered sugar and salt until the mixture is light and fluffy. Blend in the flour thoroughly to form the cookie dough base.
  2. Incorporate the butterscotch chips and finely chopped pecans into the dough, mixing well by hand to ensure even distribution of flavors.
  3. Shape the dough into balls using a scant teaspoonful at a time. Place them 1 inch apart on an ungreased cookie sheet. Bake in a preheated 325°F oven for 15 to 20 minutes, or until the cookies are firm but not browned.
