- 1 28-ounce can of crushed tomatoes
- 6 cups beef stock or broth
- 1 bay leaf
- 1 teaspoon dried dill weed
- 2 teaspoons paprika
- Dash of Worcestershire sauce
- 1/2 cup uncooked rice
- V8 juice or water (for thinning soup, if necessary)
- Salt and pepper to taste
Instructions
- Prepare the Base: Heat the oil in a large stockpot or Dutch oven over medium heat. Add the ground beef, onion, and bell peppers seasoned with a generous pinch of salt and pepper. Cook until the beef is thoroughly browned and the vegetables have softened.
- Incorporate the Vegetables and Seasonings: Stir in the chopped cabbage, crushed tomatoes, beef stock, bay leaf, dill, paprika, and a dash of Worcestershire sauce. Bring the mixture to a boil, then lower the heat and let it simmer, uncovered, for approximately 45 minutes. During this time, the cabbage should become tender but not overly soft.
