For the Cajun Seasoning:
1 tsp paprika
1/4 tsp cayenne pepper
1/4 tsp oregano
1/4 tsp thyme
1/4 tsp salt
For the Chicken:
2 small bell peppers (or mini sweet peppers), thinly sliced
4 small chicken breasts
4 cloves garlic, minced
6 oz cream cheese, cold and sliced into 8 pieces
1/2 cup shredded cheddar cheese


Instructions

Make the Cajun Seasoning:
In a small bowl, combine the paprika, cayenne pepper, oregano, thyme, and salt. Mix well to combine the seasoning.
Prepare the Cajun Chicken:
Preheat your oven to 375°F (190°C).
Lay the thinly sliced bell peppers on the bottom of a casserole dish.
Place the chicken breasts on top of the peppers, ensuring the peppers are spread evenly underneath.
Generously sprinkle the Cajun seasoning over the chicken breasts. You don’t need to use all the seasoning, adjust according to taste.
Top the chicken breasts with minced garlic.
Place two slices of cold cream cheese on top of each chicken breast.
Sprinkle the shredded cheddar cheese evenly over the chicken.
Bake the Chicken:
Bake the dish uncovered in the preheated oven for 20-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
For an extra golden finish, broil the chicken for an additional 2 minutes if desired.
Serve:
To serve, scoop the cooked bell peppers from underneath the chicken and arrange them around and on top of the chicken breasts. Enjoy!
